One bite of my sister-in-law’s eclair cake at a family gathering, and I was transported back to childhood winter evenings in our warm kitchen. The combination was genius in its simplicity: layers of graham crackers and vanilla custard topped with chocolate ganache, capturing all the flavors of a classic French eclair in an easy-to-make dessert. Her crowd-pleasing version used instant pudding, whipped topping and canned frosting. The convenience was appealing, but my mind kept drifting to memories of real custard bubbling on the stovetop.

Simple, homemade custards were a constant in our home — eggs, sugar, milk and cornstarch stirred together until thick and smooth. We made chocolate, butterscotch and vanilla, which was our favorite. On chilly nights, the kitchen would fill with the sweet aroma of warming milk and vanilla. I remember watching for that moment when the glossy cream would coat the back of a wooden spoon, signaling it was done. The warmth of fresh custard was perfect childhood. Before we could pour it into small Pyrex bowls and refrigerate, my dad would swoop in for a taste. He loved custard in any form, but especially in eclairs.
